Candice Horbacz has always had a passion for food but it wasn’t until she and her husband Eric Horbacz took some time out to travel, that she realized that she also had a passion for cooking. The pair live in North Carolina and you may or may not know Candice Horbacz from her YouTube channel where she cooks and shares recipe ideas with her large following. Many may look at her channel and believe that she was trained in a Michelin starred restaurant but this couldn’t be further from the truth. Candice first learned about this hidden passion which she had for cooking during her time in Italy and here is why she was so inspired during that trip.
There is a great debate in the US right now about whether or not it is more expensive to eat healthily and how this affects the poorest in society. In Italy however this was not at all what Candice found and she was greatly inspired by seeing poor families cook up delicious meals using fresh ingredients. Candice spoke about the simplicity of the ingredients and how it was the cooking process and the herbs and spices which were used that turned these humble ingredients into a thing of beauty. Candice realized that this is what we have lost in the US, the passion for our ingredients and the creativity around what we can turn them into, rather than the quality of the ingredients themselves.
Adding on to these thoughts about creativity, it was pasta which really began to light the fire in Candice’s heart when it came to cooking. Pasta is a very simple dish which is inexpensive to prepare and nutritionally very good. Despite its simplicity there are literally hundreds of pasta dishes to try because it can lend itself to so many flavors and textures. Learning how to turn a simple sheet of pasta into so many different plates is what made Candice realize just how simple cooking should be done, a long way from the haute-cuisine and fancy cooking channels which we see on the TV.
Each family which she met in Italy would speak to her about food, where they get their ingredients from, what flavors to put with what and how best to prepare each type of dish. Everyone that she met and an understanding of how to cook because this was knowledge which had been passed down through the generations . Some families in the US do this but not enough and it was at this point that Candice realized that there was a gap in the market for a cooking program which educated on how to cook good quality and nutritionally rich food which families could enjoy. Few people learn how to cook from looking at Masterchef and so Candice endeavored to make cooking easy, simple, tasty and fun, which is exactly what she has managed to achieve with her YouTube channel, and you should certainly check it out.
